Aloo Gobhi is one of the household dishes you don't often find in restaurants, and I'm not quite sure why. It isn't decadent, but it tastes so. It isn't rich, but it tastes so. In fact, it is really simple, clean, and harmonious without having to be loaded in tons of flavors and spices. We love to eat this on Vegetarian Mondays, giving ourselves a fresh and healthy start to the week.
The main components of this dish include: cauliflower, potatoes, fresh coriander, cumin seeds, and turmeric. You can add or take away other traditional spices and make it your own, but I'll share the recipe our family uses and cooking methodology. I would definitely recommend eating this with a side of roti or some bread, and a side of yogurt!
