Bacon & Goat Cheese Wrapped Dates with Bourbon Glaze


Makes 15 dates

INGREDIENTS:

  • About 15 dates, pitted

  • 8 strips bacon (uncooked), halved

  • ½ log softened goat cheese

  • 3-4 tbsp bourbon

  • 3-4 tbsp balsamic vinegar

DIRECTIONS:

Pre-heat oven to 350 degrees Fahrenheit (150 Celsius). Take pitted dates and with a knife, slather goat cheese in the middle (about ½ tsp is good enough as you don’t want them overstuffed!) Wrap ½ a strip of bacon around the dates and place on a tray with foil paper. Place in oven and bake for about 15 minutes until the bacon is fully cooked and partially charred (I like the crunch, but will leave this to you).

In a small pan over medium heat, pour bourbon in. It will start simmering right away. Take a match and (carefully) light the bourbon on fire to smoke out all the alcohol. Add the balsamic and cook for 3-4 minutes until the mixture has reduced. Turn off the heat and let cool for a few minutes, allowing the glaze to form.

To serve, place bacon wrapped dates on a plate and drizzle generously with the balsamic-bourbon glaze. Serve warm and enjoy!
