This recipe specifies how to make pakoras using onions, but you can use ANY - and I mean ANY - vegetable you have in your fridge. I would recommend you wash and dry each veggie so you minimize the splatter from the oil, but other than that this is actually so simple to make and can be used in a variety of dishes.
Pakoras are made with chickpea flour, so they are actually gluten-free and vegan. I would recommend starting with a small batch, as I detail in my recipe, and then progressing to larger batches as you get comfortable.
Once you make the pakoras, stick them in a salad or into a sandwich, or simply eat them on their own with a chutney or sauce of your choice!
And finally - whatever vegetable oil you use, be sure to reserve and keep for later use. Nothing needs to go to waste here, and I promise you will make more than one batch! Simply strain out the oil once it cools down getting rid of little crumbs, and keep in storage for the next time you want to deep fry!
