This homemade enchilada sauce was absolutely epic. It's a really CLEAN sauce to make, healthy, vegan, gluten-free, and loaded with flavor. I added taco seasoning for spice and a dash of cinnamon for depth, and it went perfect for our Cinco De Mayo vegetarian enchiladas.
First you melt butter, add the garlic and taco seasoning, and then add some flour in. Whisk them together until they are fully incorporated and then add the vegetable broth in. Whisk until the broth thickens, then add the tomatoes in. Blend the mixture off, and then add a dash of cinnamon for depth.
That's all there is to it - it comes together in 10 minutes and is far healthier and cleaner than store-bought!
