Ghee Roasted Chicken Tacos

Serves 4


  • Corn tortillas

  • Cheddar or Pepper Jack cheese, shredded

  • 5-6 pieces boneless, skinless chicken thighs, chopped

  • 2-3 tbsp ghee (clarified butter)

  • 3 tbsp garam masala

  • Salt, to taste

  • 3 cloves garlic, finely chopped

  • 1-inch ginger, finely chopped

  • 1 lemon

  • 1 tbsp red chili powder

  • 1 tbsp turmeric powder

  • 1 tomato, chopped

  • Cilantro, chopped


To marinate the chicken, take a bowl and add chicken. Squeeze half a lemon over and add chopped garlic, ginger, and salt. Marinate for 15 minutes at least.

Take a large pan over medium heat and add ghee. Add the marinated chicken and start to sear on all sides. Slowly add the spices in, including the garam masala, chili powder, and turmeric. Mix everything together. After the chicken has cooked, add chopped tomatoes and cilantro. Turn off the heat.

To make tacos, warm up the corn tortillas and melt cheddar cheese on top. Add chicken on top of the cheese and garnish with additional cilantro, top with your favorite sauce or salsa. Enjoy!
