Greek Salads are my go-to in the summer time - like ALL summer long. I feel like I could have these a few times a week and never get tired of them. They're so fresh and wholesome and nourishing for the body, and I think these days we need all the soul and body nourishment we can get. This only uses a handful of ingredients and can easily be made as a meal replacer for you or family! You can also swap out any veggies for ones you may prefer, so just use this as a template to get creative and make it your own.
