
Serves 4
INGREDIENTS:
4 fillets of lemon sole (or a white fish substitute)
5-6 cloves garlic
3 tbsp olive oil
Salt, to taste
Fresh chives
1 fresh lemon
Crushed chili flakes, to taste
½ cup light cream
DIRECTIONS:
Preheat oven to 375 degrees Fahrenheit (250C). In a foil take garlic cloves and wrap into a circle, with the top peaking. Drizzle 2 tablespoons of olive oil and place in oven until the oil is sizzling and the garlic is browned. In a pan, drizzle remaining olive oil on medium heat and sear fish on both sides. Take the cooked garlic which should be softened, smash and place in pan so it infuses with the fish.
After the lemon has seared, add cream, salt, and crushed red chili flakes. Cook through until all the flavors infuse and add juice from the whole lemon. Place on a plate and top with chives and serve. #fish #seafood #cleaneats #healthy #garlic
