These watermelon pops are SO, so refreshing and the perfect recipe to concoct right as we start the brink of summertime. They are vegan, HEALTHY, fresh, and delicious - and they are made from just a few simple, pure ingredients.
In a blender (we used our smoothie one just so it's that much easier to clean), blend together coconut milk, fresh watermelon pieces, and agave. That's it - that's how simple it is. And then you start to fill up an ice-pop molder.
Fill up the ice pop molds 75% of the way, leaving room for the green blend. Once they are all filled up, put them in the freezer to partially freeze, which will make adding the green layer nice and clean.
In the same blender, use the remaining can of coconut milk and add fresh basil leaves (you can substitute mint if you don't have basil), agave syrup, and fresh lime juice. Blend together. After about 30 minutes the watermelon mixture should be partially frozen, so take that out and fill the remaining mold with the "crust".
And that's it - that's how simple and beautiful it is. I took the candied ginger I previously created and hid some pieces in the basil mixture. Top off the molds and place back in the freezer for at least 1-1.5 hours, and then you are ready to go!
